Villiera Brut Natural 2021 reflects this philosophy particularly well. Produced exclusively from Chardonnay, the wine is made with minimal intervention, relying on natural fermentations and limited sulphur additions to preserve purity and freshness. Extended lees ageing in bottle adds depth and texture, while the estate’s cool vineyard sites help maintain the crisp acidity essential for fine Cap Classique.

Bright pale gold with a persistent, fine mousse and lively bead.
Nose:
Rich yeasty aromas lead the nose, followed by baked apple, lemon peel and toasted brioche notes with subtle nuttiness developing underneath.
Palate:
The palate is textured and creamy yet remains focused and energetic. Layers of citrus, biscuit and lightly toasted almond are supported by bright acidity and a distinctly dry, savoury profile. The mousse is fine and integrated, giving the wine a polished feel without excess weight.
Finish:
Long, dry and gently toasty, finishing with lingering brioche, citrus zest and a savoury mineral edge.
