Vergelegen Reserve Cabernet Sauvignon 2021
Cabernet Sauvignon
Description
Vergelegen Wine Estate, situated on the slopes of the Helderberg in Stellenbosch, is one of South Africa’s most historic and respected wine properties. Established in 1700, the estate combines centuries of heritage with a modern, terroir-focused approach to winemaking. Cooling False Bay breezes and a diverse range of vineyard sites allow for slow, even ripening, helping preserve freshness and structure in the wines.
The Reserve Cabernet Sauvignon 2021 is sourced from vineyards planted across different elevations and soil types on the estate, particularly Hutton and Oakleaf soils known for producing structured, age-worthy Cabernet Sauvignon. Grapes were hand-harvested and fermented in a combination of stainless steel and wooden vessels to build both purity and texture. The wine spent 12 months maturing in 225L and 300L French oak barrels, using a combination of first-, second- and third-fill oak to support the fruit without overwhelming it.
Colour:
Deep garnet red with a dark ruby centre.
Nose:
Aromatic layers of blackcurrant, ripe plum and blackberry are supported by notes of cedar, cigar box, dark spice and subtle leather. Hints of graphite and oak spice add further complexity.
Palate:
Full-bodied and structured, with concentrated dark fruit carried by firm, fine-grained tannins. The palate shows cassis, black cherry and plum balanced by savoury spice, cedar and polished oak. Fresh acidity keeps the wine focused and gives lift to the richer fruit profile, while the texture remains refined rather than heavy.
Finish:
Long and persistent, finishing with lingering black fruit, spice, tobacco leaf and subtle oak notes.

Vergelegen Reserve Cabernet Sauvignon 2021
- Food Pairing : Vergelegen Reserve Cabernet Sauvignon 2021 pairs particularly well with richly flavoured red meat dishes where the wine’s tannin structure and savoury depth can fully shine. Grilled ribeye, beef fillet, lamb cutlets and slow-braised short ribs all work beautifully, especially when cooked over open coals. The wine’s cedar and cigar box notes also complement rosemary, thyme and smoky seasoning, while mature hard cheeses bring out the Cabernet’s darker fruit and polished oak character.
