Tokara Reserve Collection Cabernet Sauvignon 2021
Cabernet Sauvignon
Description
Tokara Estate is situated on the elevated slopes of the Simonsberg mountain in Stellenbosch, where vineyards benefit from decomposed granite soils, cooling ocean breezes from False Bay, and wide diurnal temperature shifts. These conditions allow for slow, even ripening and the development of Cabernet Sauvignon with both structure and aromatic clarity.
Founded with a clear focus on quality, Tokara follows a thoughtful, detail-driven approach in both vineyard and cellar. Grapes for the Reserve Collection are carefully selected from the estate’s best-performing sites, with hand-harvesting and meticulous sorting ensuring only the finest fruit is used. The wine is matured in French oak barrels, supporting the fruit rather than dominating it, and reflecting a balance between New World precision and Old World restraint.
Colour:
Deep garnet with a dense, almost opaque core and a youthful crimson rim.
Nose:
Blackcurrant and cassis lead, followed by dark cherry and plum. Subtle layers of cedar, graphite, dried herbs, and a touch of tobacco unfold with time in the glass.
Palate:
Medium- to full-bodied with a firm but refined tannin structure. The fruit profile mirrors the nose, with blackcurrant and dark berries at the forefront, supported by savoury notes and well-integrated oak. Fresh acidity keeps the wine focused, giving it lift and definition without feeling heavy.
Finish:
Long and steady, with lingering dark fruit, a hint of spice, and a dry, structured close.

Tokara Reserve Collection Cabernet Sauvignon 2021
- Food Pairing : Tokara Reserve Collection Cabernet Sauvignon 2021 pairs naturally with dishes that match its structure and depth. Grilled ribeye or a classic South African braai works well, as the tannins soften alongside the richness of the meat. Slow-braised lamb shank or oxtail complements the wine’s savoury notes, while a mushroom risotto offers an earthy, meat-free alternative that echoes its herbal and graphite nuances. Mature hard cheeses, such as aged cheddar or Comté-style, also sit comfortably alongside the wine’s firm structure and lingering finish.
