Nestled in the Robertson Valley, Springfield Estate is a family-owned winery run by the Bruwer family, whose winemaking roots trace back to French Huguenot settlers. The region's limestone-rich soils, warm growing season and cooling evening temperatures create ideal conditions for producing structured red wines with both concentration and freshness.
Springfield's philosophy, captured in its "Made on Honour" motto, centres on allowing nature to take the lead. Minimal intervention in both vineyard and cellar ensures that each wine reflects its origin and vintage. The Work of Time is the estate's flagship Bordeaux-style red blend, named in recognition of the patience required to create wines of depth and character. Carefully matured in French oak and released only when ready, it represents Springfield's belief that some of the most rewarding qualities in wine can only emerge through time.
Colour:
Deep ruby red with a youthful garnet edge, showing excellent concentration and clarity.
Nose:
Complex aromas of blackcurrant, cassis and dark plum lead the bouquet, followed by layers of cedarwood, graphite, tobacco leaf and subtle spice. As the wine opens, hints of dried herbs, dark chocolate and pencil shavings add further depth.
Palate:
Full-bodied and structured, with concentrated dark berry fruit supported by fine-grained tannins and well-integrated oak. Cabernet Sauvignon provides backbone and freshness, while Merlot contributes texture and generosity. The Petit Verdot and Cabernet Franc add complexity, savoury notes and aromatic lift. Despite its power, the wine remains balanced and composed, with freshness carrying the fruit through the palate.
Finish:
Long, savoury and persistent, with lingering notes of cassis, cedar, spice and finely textured tannins that suggest further ageing potential.
