Springfield Estate lies in the heart of the Robertson Valley, where limestone-rich soils, warm sunny days and cool evenings provide ideal conditions for growing Cabernet Sauvignon. Family-owned by the Bruwer family, the estate has become renowned for its commitment to authenticity, producing wines under its long-standing philosophy of "Made on Honour".
The Whole Berry Cabernet Sauvignon showcases a softer, more fruit-driven expression of the variety. Rather than aggressively extracting tannins and colour during fermentation, Springfield ferments whole berries to encourage a gentler extraction process. This approach preserves purity of fruit while producing a wine with approachable structure and elegance. The result is a Cabernet Sauvignon that remains true to the variety while offering immediate enjoyment alongside the capacity to develop further complexity with age.
Colour:
Deep ruby red with youthful purple highlights and excellent intensity.
Nose:
Classic Cabernet Sauvignon aromas of blackcurrant, cassis and ripe plum are complemented by notes of cedar, pencil shavings and subtle dried herbs. Gentle hints of dark chocolate and spice emerge as the wine opens in the glass.
Palate:
Medium- to full-bodied with vibrant dark berry fruit at its core. Blackcurrant and plum flavours are supported by fine, polished tannins that provide structure without dominating the palate. The whole berry fermentation contributes a smooth texture and freshness, while balanced acidity keeps the wine focused and expressive.
Finish:
Long and elegant, with lingering cassis, savoury spice and soft cedar notes carrying through the finish.
