Situated in the Robertson Valley, Springfield Estate has earned a reputation for producing wines that reflect both place and time. Family-owned and run by the Bruwer family, descendants of French Huguenot settlers, the estate follows a philosophy of minimal intervention under its long-standing motto, "Made on Honour".
The Robertson region's limestone-rich soils, warm growing season and cooling evening temperatures provide ideal conditions for Cabernet Sauvignon, allowing fruit to ripen fully while retaining freshness and structure. The Méthode Ancienne Cabernet Sauvignon represents Springfield's commitment to patience. The 2017 vintage spent two years maturing in French oak barrels before a further four years ageing in bottle prior to release. This extended maturation allows the wine to develop complexity and integration before reaching the glass, producing a Cabernet Sauvignon that balances power with refinement.
Colour:
Deep garnet red with subtle brick-red highlights beginning to emerge at the rim, reflecting the wine's maturity and development.
Nose:
Layers of blackcurrant, cassis and dark plum are complemented by notes of cedar, tobacco leaf and graphite. With time in the glass, hints of dried herbs, leather and gentle spice add further complexity.
Palate:
Full-bodied and structured, showing concentrated dark berry fruit supported by finely integrated tannins. Years of maturation have softened the wine's youthful firmness, revealing savoury notes of cigar box, dark chocolate and earth alongside the fruit. Fresh acidity provides balance and keeps the palate focused despite the wine's richness.
Finish:
Long, dry and persistent, with lingering notes of cassis, cedar, spice and savoury complexity.
