Description
The Spier Prestige Cuvée 2016 is the flagship Cap Classique from Spier Wine Farm, one of Stellenbosch’s oldest and most established wine estates. The vineyards are planted on the cooler mountain slopes of Stellenbosch, where Atlantic Ocean breezes help preserve freshness and acidity - essential for premium traditional-method sparkling wine. Estcourt and Glenrosa soils contribute structure and minerality, while the moderate climate allows for slow, even ripening.
Produced only in exceptional vintages, the Prestige Cuvée reflects Spier’s patient, detail-focused approach to sparkling wine. Chardonnay and Pinot Noir grapes were hand-harvested, whole-bunch pressed and partially fermented in older French oak before secondary fermentation in bottle. The wine spent an extraordinary 84 months on the lees before disgorgement, building depth and texture while retaining precision and energy.
Colour:
Pale gold with a refined white mousse and a stream of fine, persistent bubbles.
Nose:
Golden Delicious apple, ripe citrus and white peach lead the aromatics, followed by freshly baked brioche, roasted almond and subtle honeyed notes from extended lees ageing.
Palate:
The palate is focused and finely textured, with crisp citrus and orchard fruit balanced by creamy mousse and savoury biscuit complexity. The long lees maturation adds depth without heaviness, while the acidity keeps the wine vibrant and dry in style.
Finish:
Long, precise and mineral, finishing with lingering citrus peel, toasted pastry and delicate nuttiness.
