Spier Noble Late Harvest 2024
Blend : White
Description
Spier Wine Farm, one of South Africa’s oldest and most recognised estates, is situated near Stellenbosch in the Western Cape. The region benefits from a Mediterranean climate with cooling ocean influences and varied soils, allowing for both freshness and ripeness in the fruit.
What sets the Spier Noble Late Harvest 2024 apart is that it is entirely dependent on nature. This wine can only be made when specific conditions allow for the development of Botrytis cinerea (noble rot), a process that concentrates sugars and flavours in the grapes. In 2024, these conditions aligned in Chenin Blanc vineyards, producing intensely flavoured, low-yield fruit.
The grapes were selectively hand-harvested, with only botrytised berries chosen. Gentle handling, skin contact, and fermentation followed by maturation in French oak barrels for around 11 months contribute to both richness and complexity, while Chenin Blanc’s natural acidity keeps the wine lifted and precise.
Colour:
Pale gold with a luminous, almost amber tint.
Nose:
Apricot and honey lead, followed by notes of elderflower, citrus peel and a gentle floral lift.
Palate:
Rich and rounded, showing layers of ripe stone fruit, marmalade and honey. Despite the sweetness, a lively acidity runs through the wine, keeping it fresh and defined rather than heavy.
Finish:
Long and expressive, with lingering citrus brightness and a delicate, honeyed depth.

Spier Noble Late Harvest 2024
- Food Pairing : Spier Noble Late Harvest 2024 naturally suits desserts, but the key is balancing sweetness with acidity. It pairs particularly well with crème brûlée or baked milk tart, where the caramelised richness is lifted by the wine’s freshness. Blue cheeses such as Gorgonzola work equally well, as the saltiness contrasts with the honeyed fruit. For a more local touch, try it with apricot-based desserts or fruit tarts - the wine mirrors these flavours while its acidity keeps the pairing from becoming overly rich.
