Spier 21 Gables Cabernet Sauvignon 2019
Cabernet Sauvignon
Description
Spier Wine Farm, one of South Africa’s oldest estates dating back to 1692, lies in Stellenbosch with key Cabernet Sauvignon vineyards on the Helderberg slopes. Here, proximity to False Bay - just a few kilometres away - brings cooling ocean breezes that slow ripening and help preserve structure and freshness. The soils are decomposed granite with clay subsoils, encouraging concentration while retaining moisture.
The 21 Gables range reflects Spier’s heritage, named after the historic Cape Dutch gables preserved on the farm. This Cabernet Sauvignon is sourced from a single vineyard and crafted with a classical approach: careful hand-harvesting, extended maceration, and maturation in a high proportion of new French oak (around 26 months), resulting in a wine that balances power with refinement.
Colour:
Deep ruby red with a youthful, vibrant rim.
Nose:
Cassis and blackcurrant lead, followed by violet lift and layers of cedar, pencil shavings, and subtle oak spice.
Palate:
Full-bodied with a dense core of dark berry fruit. Fine-grained tannins provide structure without harshness, while notes of graphite, spice, and oak unfold through the mid-palate. There is both richness and a sense of control, keeping the wine focused rather than heavy.
Finish:
Long and structured, with lingering dark fruit, cedar, and a dry, polished finish.

- Food Pairing : Spier 21 Gables Cabernet Sauvignon 2019 is well suited to rich, structured dishes where tannin and fruit can work together. It pairs naturally with chargrilled ribeye or sirloin, where the wine’s tannins soften against the fat while the cassis fruit lifts the flavours. Slow-cooked dishes like lamb shank or beef short ribs also work well, echoing the wine’s depth and savoury notes. For a vegetarian option, a roasted aubergine or mushroom-based dish brings out the wine’s earthy and graphite nuances, while hard cheeses offer a simple, satisfying match that complements its firm structure and long finish.
