In the cellar, careful bunch and berry selection is followed by fermentation in stainless steel tanks with regular pump-overs to build colour and flavour. The wine undergoes malolactic fermentation and spends several months maturing in French oak barrels before bottling, adding subtle spice and texture to the finished wine.
