Single Minded Port Dundas 2004 16 YO
Whisky : Scottish
Description
Distilled at the now-closed Port Dundas distillery in Glasgow, the Single Minded Port Dundas 2004 16 YO is an independent bottling from Douglas Laing’s Single Minded range. Port Dundas was once one of Scotland’s largest grain whisky distilleries before closing in 2010, making releases like this increasingly sought after by whisky enthusiasts and collectors alike.
This whisky was distilled in 2004 and matured for 16 years in a refill barrel before being bottled in 2021. Douglas Laing bottled the whisky without chill filtration or added colouring, allowing the spirit’s natural texture and character to remain intact.
Unlike heavily peated or oak-dominant Scotch whiskies, mature grain whisky from Port Dundas tends to emphasise softness, vanilla richness and silky texture. The Single Minded series aims to present single cask whisky in a straightforward, approachable style while still highlighting the individuality of each cask.
Colour:
Bright gold with pale amber highlights.
Nose:
Vanilla pod, honeycomb and caramel lead the aromas, followed by notes of coconut, butter biscuits and ripe orchard fruit. A light dusting of cinnamon and soft oak spice develops with time in the glass.
Palate:
Smooth and rounded with a creamy mouthfeel. Flavours of toffee, brioche, banana bread and baked apple sit alongside gentle oak spice and almond notes. The grain whisky character remains elegant and accessible rather than heavy or intensely woody.
Finish:
Medium to long, finishing with lingering vanilla sweetness, toasted oak and soft baking spice.

- Food Pairing : The Single Minded Port Dundas 2004 16 YO pairs particularly well with desserts and richer savoury dishes that complement its creamy texture and vanilla-driven style. Try it alongside crème brûlée, sticky toffee pudding or white chocolate desserts, where the whisky’s caramel and biscuit notes echo the sweetness without becoming cloying. It also works surprisingly well with mature hard cheeses, smoked almonds or slow-cooked pork belly, where the gentle oak spice and smooth grain character provide balance rather than overpowering the food.
