Saxenburg Private Collection Chardonnay 2023
Description
Saxenburg Wine Estate lies in the Polkadraai Hills of Stellenbosch, a region known for its varied soils and cooling influences from False Bay. These maritime breezes moderate the warm Stellenbosch climate, allowing grapes to ripen slowly while retaining the acidity that gives balance and structure to Chardonnay.
Owned by the Bührer family since 1989, Saxenburg has focused on expressing the character of individual vineyard sites. The Chardonnay vineyards grow on decomposed granite and weathered sandstone slopes, soils that contribute minerality and natural freshness to the wine. For the Saxenburg Private Collection Chardonnay 2023, grapes are predominantly whole-bunch pressed and fermented in barrel, with a portion undergoing natural fermentation. The wine spends around 11 months on the lees in a mix of new and older oak barrels, building texture while keeping oak influence restrained.
Colour:
Bright straw with a pale gold tint, showing clarity and youthful vibrancy in the glass.
Nose:
Citrus peel, lemon and ripe pear lead the aromatics, followed by hints of white peach and subtle notes of toasted nuts and gentle oak spice.
Palate:
Medium-bodied with a smooth, rounded texture. Flavours of citrus, peach and stone fruit are layered with a light creamy note from lees ageing. The oak is present but restrained, supporting the fruit while maintaining freshness and a fine mineral edge.
Finish:
Clean and persistent with lingering citrus and a subtle nutty complexity.

- Food Pairing : The balance of freshness and gentle oak in Saxenburg Private Collection Chardonnay 2023 makes it a versatile partner at the table. It pairs well with grilled salmon or seared tuna, where the wine’s citrus and mineral character complements the richness of the fish. Creamy chicken dishes or a mushroom risotto also work beautifully, as the wine’s subtle lees texture mirrors the dish’s richness while the acidity keeps the palate refreshed. For something lighter, try it with roast chicken or a simple pasta with lemon and parmesan, where the wine’s fruit and freshness bring the flavours together naturally.
