Saxenburg PC Cabernet Sauvignon 2021
Cabernet Sauvignon
Description
Situated in the Polkadraai Hills of Stellenbosch, Saxenburg Wine Estate has built its reputation around site-driven red wines that combine power with refinement. The estate’s elevated vineyards benefit from cooling ocean breezes and decomposed granite soils, helping Cabernet Sauvignon retain freshness and aromatic detail even in warmer vintages.
The Private Collection range represents Saxenburg’s more terroir-focused winemaking philosophy, drawing fruit from carefully selected vineyard blocks close to the cellar. The 2021 vintage includes small additions of bush vine Cabernet Franc and Malbec to add complexity and texture. Gentle extraction and measured oak maturation preserve varietal clarity while allowing the wine to develop depth and structure without excessive heaviness.
Colour:
Bright garnet ruby with deep concentration and youthful intensity.
Nose:
Layers of mulberry, blackcurrant, prune, and bramble fruit lead the aromatics, followed by tobacco leaf, mocha, cedar spice, and subtle fynbos notes typical of the Polkadraai Hills.
Palate:
Smooth and composed with refined tannins and a fresh structural line running through the wine. Dark berry fruit sits at the core, supported by graphite, cocoa, and savoury herbal detail. The Cabernet Franc and Malbec components contribute lift and texture without overshadowing the Cabernet Sauvignon character.
Finish:
Long and focused, finishing with dark cherry, cedar spice, and lingering freshness.

- Food Pairing : Saxenburg Private Collection Cabernet Sauvignon 2021 pairs naturally with richer dishes that benefit from firm but polished tannins. Grilled ribeye, slow-roasted lamb shoulder, or beef short ribs work particularly well, as the wine’s dark fruit and savoury structure complement charred, umami flavours. It also suits mushroom-based dishes like porcini risotto or wild mushroom pasta, where the wine’s cedar and graphite notes add depth without overwhelming the food. Mature hard cheeses and herb-crusted venison are equally strong matches thanks to the wine’s freshness and layered finish.
