Saxenburg Private Collection Cab. Sauvignon 2013
Cabernet Sauvignon
Description
Saxenburg Wine Estate is situated in the Polkadraai Hills of Stellenbosch, an area known for its decomposed granite soils and cooling ocean-influenced breezes. These conditions help Cabernet Sauvignon retain structure and freshness while achieving full phenolic ripeness. Family-owned and run by the Basson family, Saxenburg balances a respect for classic Bordeaux styling with a distinctly Stellenbosch expression. Fruit for the Private Collection range is carefully selected, with an emphasis on vineyard detail and restrained oak maturation to support, rather than dominate, the wine’s structure and varietal character.
Colour:
Deep garnet with slight brick-red edges, showing early signs of maturation.
Nose:
Blackcurrant and cassis lead, followed by cedar, tobacco leaf, and a touch of graphite. Subtle dried herbs and earthy notes add complexity.
Palate:
Medium- to full-bodied with softened tannins that still provide grip. Dark berry fruit has evolved into more savoury tones, with hints of plum, spice, and pencil shavings. The acidity keeps the wine lifted and structured without feeling heavy.
Finish:
Lingering and gently savoury, with fading notes of dark fruit, oak spice, and dried herbs.

- Food Pairing : The structure and maturity of Saxenburg Private Collection Cabernet Sauvignon 2013 make it well suited to dishes with both richness and savoury depth. Pair it with a classic Karoo lamb roast or grilled lamb chops, where the softened tannins complement the meat’s natural fat. It also works well with beef sirloin or a slow-braised oxtail, as the wine’s acidity cuts through richness while echoing the dish’s savoury notes. For something simpler, try it with mature hard cheeses or a mushroom-based dish, which will highlight the wine’s earthy, evolved character.
