Rustenberg Wild Ferment Sauv Blanc 2024 (Diners)
Sauvignon Blanc
Description
Rustenberg Wine Estate is among South Africa’s oldest wine farms, founded in the 17th century on the slopes of the Simonsberg mountain. Its vineyards enjoy cool Atlantic breezes and diverse soils that give precision and energy to white varieties. The Wild Ferment Sauvignon Blanc embraces both site and process: grapes are fermented with indigenous yeasts in French oak barrels and aged on lees, adding breadth and texture without masking the varietal’s natural vibrancy. The result is a Sauvignon Blanc that bridges classic freshness with a richer, more layered palate - a thoughtful expression from a heritage estate that respects terroir and measured winemaking.
Colour:
Pale straw with subtle green glints, showing youthful clarity.
Nose:
Bright aromas of gooseberry and white peach rise first, woven with melon and pineapple notes. There’s a gentle herbaceous hint and integrated oak spice that adds warmth without overshadowing fruit purity.
Palate:
Medium-bodied with lively acidity and a rounded, almost silky texture. The fruit spectrum - from citrus leaf through stone fruit - carries through gracefully, supported by lees-derived weight and gentle oak influence. The oak and lees ageing help balance the natural zing of Sauvignon Blanc, giving the palate depth and persistence.

- Food Pairing : Rustenberg Wild Ferment Sauvignon Blanc 2024 is a versatile companion at the table. Its lively acidity and nuanced texture make it an excellent match for grilled or citrus-dressed seafood - prawns or kingklip with lemon and herb would be particularly harmonious. The gentle oak influence and rich mid-palate mean it can also stand up to creamy pasta dishes with light herbs, or roast pork with fennel and apple, where the fruit and savoury elements echo the wine’s own profile. Fresh goat’s cheese or a garden salad with green herbs offer contrasting brightness that complements the wine’s fresh-fruited core.
