Rainbow's End Merlot 2021
Merlot
Description
Rainbow’s End Wine Estate is perched high on the slopes of the Banghoek Valley in Stellenbosch, one of the Cape’s most scenic and elevated wine-growing areas. The vineyards lie along the foothills of the Drakenstein Mountains, where altitude, cooler temperatures and well-drained granite-derived soils help produce grapes with concentrated flavour and natural freshness.
Family-owned and operated, Rainbow’s End is known for its focused approach to Bordeaux varieties, particularly Merlot and Cabernet Franc. Careful vineyard management and hand-harvesting ensure fruit arrives at the cellar in optimal condition. In the winery, the philosophy balances modern precision with minimal intervention, allowing the vineyard character to show through. Maturation in French oak barrels adds structure and subtle complexity while preserving the purity of fruit that the Banghoek Valley can deliver.
Colour:
Deep ruby with a vibrant crimson edge, showing youthful concentration in the glass.
Nose:
Aromatic layers of ripe plum, black cherry and mulberry lead the bouquet, supported by notes of cocoa, cedar and gentle spice from oak maturation. Subtle hints of dried herbs and dark chocolate add further depth.
Palate:
Medium- to full-bodied with a plush texture typical of Merlot. Juicy dark berry fruit sits at the core, balanced by soft, rounded tannins and fresh acidity. The wine shows both richness and elegance, with oak providing gentle structure without overpowering the fruit.
Finish:
Smooth and lingering, leaving impressions of ripe plum, cocoa and a touch of savoury spice.

Rainbow's End Merlot 2021
- Food Pairing : The supple texture and ripe fruit of the Rainbow’s End Merlot 2021 make it an easy partner for a range of comforting dishes. It pairs particularly well with roast lamb or herb-crusted lamb cutlets, where the wine’s soft tannins complement the meat’s richness. A slow-cooked beef lasagne or tomato-based pasta also works beautifully, as the wine’s fruit profile balances the acidity of the sauce. For something simpler, try it with a gourmet burger or grilled portobello mushrooms, where the wine’s plush texture and savoury undertones enhance the dish without overpowering it.
