Paul Wallace Little Flirt Sauvignon Blanc 2025
Sauvignon Blanc
Description
Paul Wallace Family Wines is a small, family-owned estate in Elgin, one of South Africa’s most exciting cool-climate wine regions. Traditionally known for apples and pears, Elgin’s elevated vineyards and maritime influence have also made it ideal for Sauvignon Blanc, producing wines with natural acidity, aromatic lift and a distinctly crisp character.
The Little Flirt Sauvignon Blanc 2025 is sourced from some of the highest-lying terraces on the farm, where west, south and east-facing slopes contribute different flavour components to the final blend. Hand harvesting and cool fermentation in stainless steel preserve the purity of the fruit, while the estate’s careful vineyard management ensures freshness and site expression remain at the centre of the wine. The result is a Sauvignon Blanc that balances bright fruit with a subtle saline and fynbos complexity typical of Elgin.
Colour:
Pale straw with bright green highlights and a youthful clarity in the glass.
Nose:
Gooseberry, white pear and blackcurrant lead the aromatics, followed by kiwi fruit, green apple, lime zest and subtle fynbos notes.
Palate:
Fresh and layered, the palate combines tropical and citrus fruit with a lively mineral edge. The acidity is clean and energetic without becoming sharp, while the underlying saline character gives the wine added texture and depth. The fruit remains precise and focused throughout.
Finish:
Long, crisp and refreshing, with lingering citrus, green apple and savoury coastal notes on the finish.
