Paul Wallace Family Wines is rooted in the cool-climate slopes of Elgin, where altitude and ocean-influenced breezes cultivate freshness and aromatic purity. Owner and viticulturist Paul Wallace and his family have focused on small parcels that express site character, working with careful canopy management and traditional winemaking methods that respect the terroir. The “Highlander” Cabernet Franc comes from a compact, high-lying block planted in 2016, chosen for its ability to ripen this elegant Bordeaux variety while retaining lively acidity. Mature grapes ferment with a portion of whole bunches and age in French oak to add texture and subtle spice, reflecting a thoughtful Old World-inspired approach within a distinctly South African setting.
Colour: Deep garnet with a bright ruby edge hints at both richness and freshness.
Nose: Aromas of rose petal and red currant open first, layered with wild strawberry, bramble and a hint of cracked paprika and savoury herbs.
Palate: Medium-bodied and poised, this Cabernet Franc shows vibrant red fruit flavours framed by fine, crunchy tannins and vibrant acidity. Subtle herbal tones and discreet oak add complexity without overpowering the fruit.
