Paul Wallace Wines is a boutique winery based in the cool-climate Elgin Valley, where elevated vineyards and maritime influences create ideal conditions for structured, aromatic wines. Founded by winemaker Paul Wallace, the estate focuses on small-batch production and careful vineyard sourcing from some of Elgin’s most respected sites.
The valley’s cooler temperatures allow grapes to ripen slowly, preserving freshness while building flavour concentration. The Paul Wallace Crackerjack 2022 is a Bordeaux-style blend crafted to highlight both structure and drinkability. Individual components are vinified separately before maturation in French oak barrels, allowing each varietal to contribute its character to the final blend. The result is a wine that balances Elgin’s natural elegance with the depth expected from classic Cape blends.
Colour:
Deep ruby with a vibrant garnet rim, showing good depth and clarity.
Nose:
Aromatic layers of blackcurrant, dark cherry and plum lead the bouquet, followed by hints of cedar, tobacco leaf and dried herbs. Subtle notes of graphite and spice add complexity.
Palate:
Medium- to full-bodied with a refined structure. Dark berry fruit sits at the core, supported by firm yet polished tannins. Cabernet Sauvignon brings structure and cassis notes, while Merlot adds softness and roundness. Cabernet Franc contributes lifted herbal aromatics and freshness.
Finish:
Long and composed, with lingering black fruit, cedar and a gentle savoury edge.
