Paul Wallace Family Wines crafts the Brave Heart Pinot Noir on Wallovale Vineyards in Elgin, where cool-climate conditions, altitude and meticulous care help this temperamental grape thrive. Named in playful homage both to William Wallace and Pinot Noir’s reputation as the “heartbreak grape,” this wine is made with careful gentle handling - whole berries fermented in open fermenters, basket pressing, malolactic completion and a thoughtful 10-month maturation in French oak barriques. The result is an expression that balances purity of fruit with subtle oak complexity and a clear sense of place.
Colour: Bright ruby, inviting and clear in the glass.
Nose: A complex bouquet of cherries, wild forest strawberries and watermelon with whispers of white pepper and savory umami, promising both fruit and nuance.
Palate: Medium-bodied and poised, flavours of red cherry and cranberry weave with a spicy core. Fine, silky tannins from subtle Burgundian oak barrel influence give texture and refinement without overpowering freshness.
