Opstal The Barber Semillon 2022
Semillon
Description
Opstal Estate is a family-owned winery situated in the Breedekloof region’s Slanghoek Valley, where mountain surrounds, river-cooled vineyards and varied alluvial soils create favourable conditions for expressive, structured wines. The estate has become known for combining traditional farming roots with a more contemporary, minimal-intervention approach in the cellar.
The Barber Sémillon 2022 forms part of Opstal’s small-production Heritage range and pays tribute to Attie Louw, a former barber who became the estate’s fifth-generation winegrower after World War II. The wine is produced from a single Sémillon vineyard planted near the Slanghoek River, with spontaneous fermentation and maturation in older oak barrels for approximately 10 months. The restrained use of oak allows the variety’s naturally waxy texture, citrus freshness and savoury complexity to remain front and centre.
Colour:
Bright pale gold with subtle green reflections and excellent clarity.
Nose:
Layered aromas of lemon zest, lime and apricot unfold alongside notes of hay, dried herbs, beeswax and subtle fynbos spice. There is a quiet savoury depth beneath the fruit profile.
Palate:
Textured and concentrated without feeling heavy. Citrus and stone fruit flavours are supported by a gently waxy mouthfeel and bright acidity. The older oak maturation adds shape and structure rather than overt wood character, while the saline minerality keeps the palate focused and energetic.
Finish:
Long, dry and elegant with lingering citrus peel, beeswax and savoury mineral notes.

Opstal The Barber Semillon 2022
- Food Pairing : Opstal The Barber Semillon 2022 is particularly suited to richer seafood dishes such as seafood paella, grilled yellowtail or creamy mussels where the wine’s acidity and saline freshness help balance richness. The textured palate also pairs beautifully with roast chicken, pork belly or mildly spiced Asian-inspired dishes such as sweet and sour pork. Its savoury complexity and waxy texture make it an excellent partner for mature cheeses and dishes featuring herbs, butter or subtle smoky flavours.
