Opstal Estate sits at the foot of the rugged Slanghoek Mountains in the Breedekloof Wine Route, where clay-rich soils and a warm yet moderated climate favour concentrated, expressive Chenin Blanc. For generations, the Rossouw and Everson families have farmed here, with the Carl Everson label paying tribute to the 4th-generation visionary who championed Chenin on the farm’s old vineyards. The estate’s approach combines respect for heritage with thoughtful minimal cellar intervention - spontaneous ferments, older oak vessels and a focus on terroir expression - letting the grapes speak for the storied Slanghoek terroir rather than heavy manipulation.
Colour: Bright straw with a subtle golden sheen, suggesting ripe yet crisp fruit.
Nose: Aromas offer a mix of honeysuckle, hay and gentle peach notes, underscored by quince and citrus peel that reflect the cooler aspects of Slanghoek’s diurnal range.
Palate: Medium-bodied with well-defined fruit and a smooth texture, this Chenin shows peach, pear and citrus concentration framed by lively acidity. The spontaneous fermentation and oak influence add depth and a touch of savoury complexity without overt heaviness.
