Off the Record is a small batch project crafted by the Wallace family, focused on expressing unique vineyard sites with minimal intervention. The Syrah 2022 comes from a tiny parcel planted high on the Ceres Plateau, where cool seasonal temperatures and Bokkeveld shale soils help build vibrant acidity and expressive fruit. Whole-bunch fermentation and careful ageing in older French oak barrels support purity and finesse rather than overt oak influence, reflecting a winemaking philosophy that honours varietal character and terroir with restraint and clarity.
Colour: Deep, vibrant ruby-red in the glass with youthful intensity.
Nose: Spicy aromatics take centre stage - think white pepper and dried herbs - alongside juicy red and black berries and soft violet florals with a hint of garrigue-like earthiness.
Palate: The palate opens with succulent dark fruit flavours supported by a savoury thread of white pepper and a touch of saline tension. Fine, subtle tannins and lively acidity provide balance and freshness, keeping the wine approachable yet structured.
Finish: Clean and lingering, with red and black fruit lingering alongside gentle spice and savoury nuances.

- Food Pairing : Off the Record Syrah 2022 pairs beautifully with grilled lamb chops with cracked black pepper and rosemary, where the wine’s peppery spice and juicy fruit enhance the savoury richness. It also complements a roast beef with sautéed mushrooms and thyme, balancing earthy flavours with bright acidity, or charred pork loin with herb-garlic jus, where the wine’s spice and freshness cut through richer layers.
