Neil Ellis Wines was founded in 1984 with a simple but ambitious goal: to produce wines that clearly express the character of their vineyards. At a time when many producers relied heavily on cellar technique, Neil Ellis focused on sourcing grapes from specific sites where particular varieties perform best.
For Neil Ellis The Left Bank Cabernet Sauvignon Merlot 2021, fruit is sourced from carefully selected Stellenbosch vineyards, including sites on the Bottelary Hills and in the Jonkershoek Valley. These cooler, south-west facing slopes benefit from maritime breezes that slow ripening and help preserve freshness in Bordeaux varieties.
The vineyards are planted mainly on decomposed granite soils, which encourage good drainage and contribute to the wine’s structure and mineral edge. After harvest, the grapes are fermented in stainless steel tanks with careful extraction before the wine matures for around 17 months in French oak barrels, allowing the different components of the blend to integrate and develop complexity.
The result is a classic Left Bank–inspired blend that balances Stellenbosch fruit intensity with a more restrained, structured style.
Colour:
Deep ruby with a dense, youthful core and a bright rim in the glass.
Nose:
Aromatic layers of blackcurrant, raspberry and dark plum lead the bouquet. Subtle notes of cedar, pencil shavings and dried herbs add complexity.
Palate:
Medium- to full-bodied with a firm but polished tannin structure. Dark berry fruit and cassis flavours dominate, supported by hints of graphite and savoury spice. The Merlot softens the blend, bringing roundness to the mid-palate while Cabernet Sauvignon provides backbone and freshness.
Finish:
Structured and persistent, with lingering dark fruit, cedar and gentle oak spice.
