Lismore The Legend 21YO Speyside S/Malt Scotch
Whisky : Scottish
Description
Lismore is not a distillery but a historic Scotch whisky brand, originally developed by William Lundie & Co., with roots in whisky broking dating back to the early 20th century. Today, the range is associated with Speyside - Scotland’s most prolific whisky region, known for producing elegant, fruit-forward single malts shaped by soft water and a temperate climate.
“The Legend” 21-Year-Old represents the upper tier of the Lismore range, matured for over two decades in sherry hogshead casks. This extended ageing, combined with sherry influence, brings depth and softness without overwhelming the spirit’s natural character. While the exact distillery source remains undisclosed, the style leans unmistakably Speyside - refined, layered, and quietly expressive rather than bold or smoky.
Colour:
Deep amber with warm copper tones, showing its extended time in oak.
Nose:
Rich and inviting, with notes of brown sugar, vanilla and caramel layered over dried fruit. Subtle oak spice and a faint floral lift add complexity.
Palate:
Smooth and rounded, offering flavours of custard, cinnamon and sherried fruit. Hints of orange peel and sultanas bring brightness, while the texture remains soft and integrated from long maturation.
Finish:
Medium to long, with lingering vanilla fudge, gentle spice and dried fruit, tapering off cleanly without heaviness.

- Food Pairing : This is a contemplative whisky best enjoyed on its own, but it pairs surprisingly well with food when chosen carefully. It complements rich desserts like sticky toffee pudding or baked figs, where the whisky’s dried fruit and caramel notes echo the dish. Mature cheeses - particularly aged cheddar or a mild blue - work well, as the whisky’s sweetness balances savoury intensity. For something more local, try it alongside biltong or venison carpaccio; the whisky’s soft spice and sherry richness add depth without overpowering the meat.
