Hoopenburg Winery is a boutique producer on the Simonsberg wine ward of Stellenbosch, a region with a long history of quality viticulture and a focus on balanced fruit ripeness. What sets this Cap Classique apart is its foundation in 100 % Chardonnay bush vines, which tend to give bright fruit concentration and fine acidity. Crafted in the traditional bottle-fermented style (Méthode Cap Classique), the wine spends time on lees to add texture and complexity, all while preserving the fresh, pristine fruit that Chardonnay from this cooler Stellenbosch site can deliver.
Colour: Light golden straw with a persistent, fine bead typical of well-made Cap Classique.
Nose: Inviting aromas of Granny Smith apple, citrus blossom and white peach, underpinned by subtle yeasty biscuit and fresh bread-dough notes from bottle ageing.
Palate: Bright, lively acidity frames crisp apple and white nectarine flavours. Fine mousse and delicate creaminess from lees contact add texture without masking freshness.
Finish: Clean, dry and poised, with lingering citrus and delicate almond-like hints that carry through on the finish.
