Produced by Kilchoman Distillery, the Kilchoman STR Small Batch reflects the distillery’s hands-on, barley-to-bottle philosophy. Established in 2005 as Islay’s first new distillery in over a century, Kilchoman combines traditional farm distilling with a more experimental approach to cask maturation.
This Small Batch release showcases the influence of STR casks - “Shaved, Toasted and Re-charred” red wine barrels pioneered by the late Dr Jim Swan. The whisky is matured in a combination of bourbon barrels, oloroso sherry casks and STR wine casks, creating a layered style that balances classic Islay peat smoke with richer red fruit and spice character. Bottled without chill filtration and with no added colouring, it retains a full texture and natural intensity.
Colour:
Deep gold to light amber with warm copper highlights.
Nose:
Soft maritime peat smoke leads into aromas of citrus peel, grilled stone fruit and vanilla pod. Layers of milk chocolate, cinnamon, red berries and a touch of sea spray develop with time in the glass.
Palate:
Textured and warming, the palate opens with earthy smoke and toasted oak before revealing flavours of raisin, baked orchard fruit, nutmeg and dark caramel. The STR casks bring a subtle red-fruit richness that sits comfortably alongside Kilchoman’s signature coastal peat style.
Finish:
Long, smoky and gently spicy, with lingering notes of charred oak, citrus zest and soft baking spice.
- Food Pairing : Kilchoman STR Small Batch works particularly well with richer, smoky dishes that can stand up to its peat and spice character. Slow-braised beef short rib or chargrilled lamb chops complement the whisky’s earthy smoke and oak structure, while smoked brisket or sticky pork belly draw out the sweeter spice and dark fruit notes from the STR casks. Mature cheddar or aged gouda also pair comfortably with the whisky’s savoury depth and gentle maritime salinity. For something simpler, dark chocolate with sea salt highlights the whisky’s cocoa, citrus and smoky finish.
