Kanonkop Wine Estate is one of Stellenbosch’s most respected family-owned estates, situated on the lower slopes of the Simonsberg mountain. The combination of decomposed granite soils, dryland farming and cooling afternoon breezes creates naturally concentrated fruit with firm structure and ageing potential.
Paul Sauer, named after a former owner of the farm, is the estate’s flagship Bordeaux-style blend and has long been regarded as a benchmark for South African Cabernet blends. Fermented in open concrete vats with regular punch-downs and matured for around two years in French oak (a high percentage new), the wine reflects a philosophy that values structure, longevity and classical balance over immediacy. It is unmistakably Stellenbosch - powerful, composed and built to evolve.
Colour:
Deep ruby with a dense core and youthful crimson edge.
Nose:
Blackcurrant and dark cherry lead, followed by plum and cassis. Layers of graphite, cedarwood, tobacco leaf and subtle fynbos emerge with air, alongside well-judged oak spice.
Palate:
Full-bodied and structured, with firm but polished tannins framing concentrated dark fruit. The Cabernet Sauvignon provides backbone and length, Cabernet Franc adds aromatic lift and freshness, while Merlot rounds out the mid-palate. Acidity is bright and precise, keeping the wine focused despite its depth.
Finish:
Long and layered, tapering into notes of cassis, spice and a savoury mineral edge.

Slow-roasted lamb shoulder, ribeye on the braai or a classic beef Wellington will complement its firm tannin structure and dark fruit depth. The wine’s acidity keeps richer dishes like oxtail stew or mushroom ragù in check, while its savoury undertones pair beautifully with aged cheddar or Comté. This is a wine for the table - structured enough for celebratory meals, yet balanced enough to enjoy with a thoughtfully prepared Sunday lunch.
