De Toren Private Cellar, situated on the Polkadraai Hills of Stellenbosch, has become one of South Africa’s most respected Bordeaux-style producers. The estate is known for its detailed vineyard approach, with extensive soil analysis and clone selection helping shape wines that are site-specific and highly polished in style.
Edition Z - often affectionately called “Zee” - draws inspiration from the Right Bank wines of Bordeaux, where Merlot plays the leading role. The vineyards benefit from cooling ocean breezes blowing in from False Bay, helping preserve freshness and balance in the fruit. Clay-rich soils contribute to the wine’s plush texture and softer tannin profile, while careful maturation in French oak barrels adds structure and refinement without overpowering the fruit.
The 2020 vintage reflects De Toren’s hallmark style: generous but controlled, modern yet rooted in classic Bordeaux principles.
Colour:
Deep ruby with a dark garnet core and bright clarity.
Nose:
Aromatic layers of black cherry, mulberry, cranberry and cassis lead the nose, followed by notes of cedar, vanilla pod, clove and subtle graphite.
Palate:
Smooth and medium- to full-bodied, with ripe dark berry fruit supported by velvety tannins and well-integrated oak. The Merlot influence gives the wine a supple, rounded texture, while Cabernet Franc adds freshness and gentle savoury complexity. The wine remains elegant despite its richness.
Finish:
Long, polished and savoury, with lingering dark fruit, spice and soft oak nuances.

Roast lamb, beef fillet, duck breast or mushroom risotto all complement the wine’s plush fruit profile and rounded tannins beautifully.
