Situated along South Africa’s cool West Coast, Darling Cellars has become closely associated with wines shaped by Atlantic influence and dryland farming. The region’s combination of warm days, cooling ocean breezes and decomposed granite and limestone-rich soils allows Mediterranean varieties to ripen steadily while retaining freshness and structure.
The Lime Kilns range takes its name from the historic lime kilns once used in the Darling area and reflects the cellar’s focus on regional identity and site expression. The 2020 blend combines Shiraz, Grenache and Mourvèdre in a Southern Rhône-inspired style, with fruit sourced from carefully selected vineyards exposed to the cooling maritime climate. Gentle extraction and maturation in French oak help soften the structure while preserving the wine’s savoury detail and vibrant fruit character. The result is a red blend that feels generous but grounded, with freshness carrying through the palate rather than overt sweetness or oak dominance.
Colour:
Deep ruby with a bright garnet rim and good intensity in the glass.
Nose:
Aromas of blackberry, plum and ripe cherry are layered with black pepper, dried herbs and subtle smoky spice. Notes of lavender, liquorice and earthy fynbos add further complexity.
Palate:
Medium- to full-bodied, showing dark berry fruit, mulberry and spice supported by smooth tannins and balanced acidity. The Shiraz brings richness and peppery structure, Grenache adds brightness and red fruit lift, while Mourvèdre contributes savoury depth and texture. Oak is integrated, adding gentle warmth without dominating the wine.
Finish:
Softly savoury and persistent, with lingering dark fruit, spice and hints of dried herbs.
