The base spirit matures for eight years - initially in ex-bourbon casks to build core richness - before a finishing period in specially sized Oloroso sherry octave casks, which are much smaller than standard sherry butts. This increases the surface-area contact with wood and accelerates extraction of rich, fruity and spiced character.
