Peter Bayly Wines is a small, family-owned winery in the picturesque Groenfontein Valley near Calitzdorp, South Africa's historic home of fortified wines. The warm, dry climate and rugged landscape provide ideal conditions for Portuguese grape varieties, producing fruit with exceptional concentration and natural intensity. Peter and Yvonne Bayly craft their Cape Vintage using traditional methods inspired by the Douro Valley. The grapes are naturally fermented, foot-trodden in open lagares, basket pressed and fortified before spending around 18 months maturing in seasoned oak casks. The wine is bottled by hand without fining or filtration, preserving its depth, texture and ability to mature gracefully over many years.
Colour: Deep ruby-black with an opaque core and vibrant purple highlights.
Nose: Intense aromas of black cherry, ripe plum and macerated blackberries are layered with cracked black pepper, liquorice, allspice, fynbos and savoury, meaty notes.
Palate: Luxuriously rich and concentrated, showing generous black fruit supported by firm, youthful tannins. Sweetness is balanced by fresh acidity, while flavours of dark berries, plum, spice and liquorice unfold across a dense, full-bodied palate.
Finish: Exceptionally long and warming, leaving lingering notes of brandied fruit, dark spice and liquorice with a dry, persistent finish characteristic of fine Cape Vintage wines.
- Food Pairing : Peter Bayly Cape Vintage 2023 is a natural companion to mature blue cheese, aged Cheddar or creamy Gorgonzola, where the wine's richness contrasts beautifully with the saltiness of the cheese. It also pairs wonderfully with dark chocolate desserts, flourless chocolate cake, pecan tart or dried figs and roasted nuts. For a simple after-dinner serve, enjoy it slightly chilled alongside a cheeseboard or quality dark chocolate, allowing its concentrated fruit and warming spice to shine.
