Charles Fox Cap Classique Wine Estate is situated in the cool-climate Elgin Valley, one of South Africa's most respected regions for traditional-method sparkling wines. The valley's high altitude, cool temperatures and long growing season allow grapes to ripen slowly while retaining the vibrant acidity essential for fine Cap Classique. Unlike many producers, Charles Fox focuses exclusively on Cap Classique, with every bottle made entirely from estate-grown fruit. The estate follows a meticulous, low-intervention philosophy, producing only vintage wines that spend extended time ageing on the lees in dedicated underground cellars. This patient approach creates wines with finesse, purity and texture while allowing the distinctive character of Elgin to shine through.
Colour: Bright pale gold with a fine, persistent mousse and delicate streams of tiny bubbles.
Nose: Fresh citrus and orchard fruit are followed by gentle aromas of honey, toasted almond and subtle brioche, with delicate mineral notes adding freshness and complexity.
Palate: Dry and precise, the palate combines crisp citrus, baked apple and stone fruit with a creamy texture gained through extended lees ageing. Vibrant acidity provides energy while the mineral backbone keeps the wine focused and elegant.
Finish: Long, clean and persistent, finishing with lingering citrus, toasted almond and a refined chalky minerality.
