Paul Wallace Wines is a small, focused producer based in the cool-climate region of Elgin, where altitude and ocean influence create ideal conditions for expressive Sauvignon Blanc. The vineyards benefit from long, slow ripening periods, preserving natural acidity and building aromatic detail. The winemaking approach leans towards clarity and freshness, with minimal intervention in the cellar to allow the fruit and terroir to speak plainly. The “Little Flirt” range reflects a more playful, early-drinking style, but still carries the hallmark precision and restraint that Elgin does particularly well.

Colour:
Pale straw with a faint green tint, bright and youthful in the glass.

Nose:
Fresh aromatics of gooseberry, lime zest and green apple lead, followed by subtle hints of passion fruit and freshly cut herbs. There’s a clean, lifted character that points to its cool-climate origin.

Palate:
Light to medium-bodied with a crisp, linear structure. Citrus-driven flavours dominate - lemon, grapefruit and green melon - supported by a gentle tropical note. The acidity is lively but well-integrated, giving the wine energy without sharpness.

Finish:
Clean and refreshing, with lingering citrus and a faint herbal edge that keeps it dry and appetising.
