Mid to deep ruby; clearly Cab-like, but delicacy in leafiness, dark berries. Mid-weight; the same delicacy in velvety dark fruit with subtle tannins, lead pencils. Understated, but not short of flavour.
Slow-cooked lamb ragoût with baby brinjals, or calve’s liver on buttery taglierini, or crispy roast duck with sage.
