PRODUCT DESCRIPTION:
Almost inky; brambly fruit with meaty, sooty, ashy overtones – very distinctive. Not overripe, but dense dark berries with Christmas spices and smoked paprika, the tannins ripe and supportive. Confident winemaking.
FOOD PAIRING:
Pot roast aitchbone studded with bacon, or a slow-roasted marinated leg of venison, or lamb shanks cooked in red wine.
